That is exactly what the Centaur plastic switch box with low voltage add-on is built for. It has an integrated low voltage compartment alongside the line voltage box, so a 120V device and a low voltage run (thermostat, control, data drop) share one opening while staying in separate compartments. Two sizes are made, 18 cu in and 21 cu in, both 1-gang on the line voltage side.
2) How many conductors will a Centaur 18 cubic inch plastic switch box hold?
Box fill is figured from the stated volume, not from the box style. The smaller Centaur box is 18 cubic inches and the larger is 21 cubic inches, on the line voltage side. Do your fill count against those numbers for the wire gauge you are pulling, remembering the device and any grounds and clamps take their own deductions. Low voltage conductors in the separate compartment are not part of the line voltage fill.
3) Do I still need a separate low voltage mud ring if I use this Centaur box?
No. The low voltage add-on is part of the box, so you are not cutting a second opening or setting a separate bracket next to the switch box. One rough-in covers both the line voltage device and the low voltage termination.
4) Is the Centaur PSB switch box metal or plastic, and does that matter for grounding?
It is a non-metallic thermoplastic box.
