1) What is an extended lip strike for, and do I actually need one?

If you are strikng a mortise lock with both a latch and a deadbolt, or a separate auxiliary deadbolt into the same jamb, this is the wrong strike for that opening.
3) I need a strike for a pair of doors with no mullion, will the MEST-125 work?
No. The MEST-125 is a jamb-mounted ASA strike, it needs a frame to screw into, so it does nothing on the meeting stile of a double door. For a double door application look at the Detex 92 Strike Kit, part of the 90 Strike Series, which is built for double doors and comes with tamper resistant fasteners.
4) What is the difference between an extended lip ASA strike and a pipe adapter strike?
The lip is doing a different job. The Don-Jo MEST-125 extended lip ASA strike carries its lip out to 2-1/2 inches measured from the center of the screw hole to the end of the lip, which is what you use when the frame sits back from the door face and the latch needs a longer ramp to be guided home. Choose the MEST-125 when the frame is standard ASA prep and the reveal is deep; choose a pipe adapter strike when the strike has to land on round stock.
5) Will a Detex 92 strike kit work in place of a Don-Jo MEST-125 ASA strike?
No — they solve different openings. The Don-Jo MEST-125 is an extended lip ASA strike, a single flat strike plate that mortises into the frame to catch the latch on a standard commercial opening.
