1) Is this a 316 stainless nut or 18-8, and does it matter outdoors or near salt water?
The JSN103316SS is 316 stainless steel, not 18-8. Both grades resist corrosion, but 316 holds up better in aggressive environments and keeps more strength at elevated temperatures. For coastal, wash-down, pool chemical or rooftop work, 316 is the one to specify.
2) How many 6-32 stainless hex nuts come in a jar, and can I buy fewer?
