1) Will the Von Duprin 5100-3FP electric strike work with my existing Schlage cylindrical lockset?
It works if the latchbolt throw falls between 1/2 and 5/8 inch. The 5100-3FP is a strike for cylindrical locks and deadlatches, and Schlage and Falcon cylindrical locks with up to 5/8 inch throw are called out as compatible, along with many other manufacturers' cylindrical locks in that range. Measure the throw on the lock you already have before ordering. Anything longer than 5/8 inch will not seat in the keeper. The keeper itself is adjustable across the 1/2 to 5/8 inch range, so you can tune the fit rather than shimming the lock.

No. The 5100-3FP is a cylindrical lock and deadlatch strike, and the keeper only takes a 1/2 to 5/8 inch latch throw. A mortise lock with a longer latch plus a deadbolt, or an exit device latch, needs a strike prepped for that lock type and cut for the taller mortise strike pocket. If the door has a mortise lock, look for an electric strike specified for mortise locks in that frame material rather than trying to make a cylindrical strike work.
