1) Can I use the Viega 26100 MegaPress fitting on copper or PEX?
No. The 26100 is a carbon steel MegaPress fitting, made for black iron / carbon steel pipe. Copper tube takes a ProPress fitting and PEX takes a PureFlow fitting instead. Putting a MegaPress body on copper is the wrong seal geometry and the wrong pipe material pairing.
