If your branch needs to drop to a smaller size, this is not the fitting, you want a reducing tee or a reducing insert at the branch.
2) Is the Viega 26560 tee copper or steel, and what pipe can it be pressed onto?
It is carbon steel. MegaPress carbon steel fittings are made for black iron and carbon steel pipe, not copper tube. For copper you would use a copper press fitting instead. Country of origin is Germany.
