No. The AC-8 is threaded for rigid and IMC conduit only. EMT is unthreaded, so you would need an EMT-to-threaded coupling or a conduit body intended for EMT. Running it directly onto EMT is not a valid connection.
2) Should I use a 3 inch conduit body or a pull box for a 3 inch rigid run?
A conduit body like the AC-8 is the lighter-weight choice when you need to change direction or gain a pulling point on a 3 inch rigid or IMC run without the volume of a box. Use a pull or junction box instead when you are splicing conductors or need the cubic-inch volume for multiple raceways entering from several directions. Conduit bodies of this type are pulling fittings, not splice enclosures, unless the body is marked with a volume.
3) What is the Red Dot AC-8 made of, and will it hold up outdoors on a roof or exterior wall?
The body is die cast aluminum. Aluminum resists corrosion in outdoor and damp exterior runs and is lighter than malleable iron on a 3 inch run, which matters when you are supporting a large body off a wall or rooftop sleeper. For a weatherproof installation you still need the matching cover and gasket.
