1) Will the Don-Jo 9102-RC extended lip strike cover the gap where my old strike sat, or will I see the mortise behind it?
The 9102-RC face measures 2-1/4 inches in height by 2 inches in width, and Don-Jo measures that width from the center of the screw hole out to the end of the lip, not across the plate. So the plate portion sitting on the frame is narrower than 2 inches, with the rest of that dimension running out as lip. If the existing cutout in your frame is taller than 2-1/4 inches, this will not cover it and you need a larger strike or a filler plate behind it.
2) What is an extended lip strike for, and do I need one instead of a standard strike plate?
An extended lip strike is what you reach for when the door is set back from the frame face, or when the jamb has trim or a wrap that the latch has to clear before it reaches the strike. The lip runs further out than a standard strike so the latch rides up it and into the pocket instead of catching on the frame edge. The 9102-RC is that type of strike.
