That is what the extended lip is for. The 9115-RC measures 2-1/4 inches in height and 1-1/2 inches in width, and the width is measured from the center of the screw hole to the end of the lip, not overall. So you get roughly an inch and a half of lip reach past the screw line to carry the latch across a deep reveal or a trimmed jamb. Measure from your existing strike's screw center to where the latch needs to land, and compare it against that 1-1/2 inch figure before you order.
2) How many latch holes does the Don-Jo 9115-RC have, and will a deadbolt work with it?
One latch hole, so it takes a single latchbolt. That covers a cylindrical or tubular latch on its own. If your opening has a separate deadbolt above the latch, you need a second strike for the deadbolt or a two-hole strike; the 9115-RC will not serve both.

5) Is the 9115-RC strike handed, and do I need to specify left or right hand?
No handing to specify. The 9115-RC is a flat lip strike with a single latch hole and a symmetrical body, so the same part works on a left hand or right hand opening. The lip simply points toward the stop side once it is installed. Order by finish only.
