1) Will the Eaton BR loadcenter take Type CH breakers, or does it have to be BR?
Type BR 1-inch breakers only. The BR bus is a different geometry from Eaton's CH line, so CH breakers will not seat on it. If the panel you are replacing has CH breakers and you want to reuse them, this is the wrong enclosure. Anything you buy for this panel, single-pole, two-pole, GFCI or AFCI, needs to be a Type BR 1-inch breaker.
2) What size wire can I land on the main lugs of the Eaton BR 100A loadcenter?

If the drawing states an available fault current above 10 kA at this panel, this is not the right loadcenter.
6) Does the Eaton BR 100A loadcenter work on 120/240V single-phase residential service?
Yes, that is exactly what it is built for: single-phase, 120/240V. Two hots and a neutral off the utility drop or the meter socket, giving you 120V circuits off either leg and 240V across both for ranges, dryers, water heaters, and HVAC. It is not a three-phase panel, so a 208Y/120 or 240V three-phase commercial service needs a different loadcenter.
7) What is plug-on neutral and does it change how I wire AFCI and GFCI breakers?
Plug-on neutral means the neutral connection is built into the bus, so a plug-on neutral AFCI or GFCI Type BR breaker picks up its neutral when you snap it on. There is no white pigtail to run back to the neutral bar. That takes a wire out of every dual-function circuit, which on a panel full of AFCIs is a real reduction in wire in the gutter.
