One clamp fits one trade size, so order by the conduit you are running, not by the tray. Each is sold in a 100 pack.
2) Will these clamps attach to any cable tray, or only certain tray types?
These are outside rail clamps. They clamp to the outer flange of the tray side rail, so the tray has to present an accessible outside rail face where the conduit lands. If your run needs the conduit attached inside the tray or to a bottom rung, an outside rail clamp is the wrong part for that connection.
