1) What is the difference between the Leviton 278-S00, 279-S00 and 5372-S00 receptacles?
Three different circuits. The 279-S00 is the 50A 14-50R, four-wire at 125/250V. The 278-S00 is the 30A version of the same four-wire pattern, 14-30R at 125/250V, the dryer outlet. The 5372-S00 is 30A 6-30R at 250V only, which is three-wire: two hots and a ground, no neutral. Pick by what your circuit actually has. If the equipment needs 120V for controls or a clock, you need the neutral, so 14-30R or 14-50R.
2) Can I use a 50A NEMA 14-50 receptacle to replace an old three-prong 10-50 range outlet?
Not as a direct swap. The 14-50R is a four-wire device and needs a separate neutral and an equipment ground pulled to the box. An older 10-50 outlet was fed with three conductors, no separate ground. Feeding a 14-50R off that cable leaves the ground terminal dead.
