1) What pipe sizes does the Nibco 851 closet flange come in?
Two sizes: a straight 4 inch, MPN E355300, and a 4 inch by 3 inch, MPN E355250. The 4 x 3 has a 4 inch closet face with a 3 inch solder cup, so it drops onto a 3 inch DWV copper stack while still taking a standard toilet. The straight 4 inch solders to 4 inch copper DWV pipe.
2) How does the Nibco 851 flange connect to the drain pipe, glue or solder?
It solders. The 851 has a copper solder cup (C end connection), so it is sweated onto copper DWV tube with solder and flux, not cemented like a PVC or ABS flange. If your closet bend is plastic or cast iron, this is the wrong flange.
3) What is the Nibco 851 closet flange actually made of?
The body is cast bronze, ASTM B584 alloy C84400, and it is dezincification resistant. That matters on a wet floor connection where a brass alloy with higher zinc can lose zinc over time and go brittle. Material and workmanship follow ASME B16.23.

No. What you receive is the cast bronze flange itself, with the solder cup and the closet flange face. Closet bolts, the wax or foam seal, and the floor fasteners are separate, and so are the solder and flux for sweating the joint. Plan those into the job.
6) Is a bronze closet flange worth it over plastic on a copper DWV system?
On a copper DWV stack, yes, because you can sweat straight into the existing tube with no transition coupling or adapter. Plastic flanges force a dielectric or mechanical transition at the closet bend.
