1) What wire size does the Sta-Kon G973UNP ring terminal take?

No. It is a non-insulated terminal, bare metal barrel and tongue. If the installation needs the barrel covered, you add heat shrink or tape over the crimp yourself after crimping. In most 2 AWG panel and ground applications the lug is left bare.

Yes. At 2 AWG this is a heavy barrel lug, not something a hand squeeze tool for 22-10 AWG will close. You need a hydraulic or large mechanical crimper with the correct die for the barrel. The terminal itself ships bare, with no hardware, so the stud bolt, washers, and any insulating sleeve are separate.
5) Is this terminal nickel plated, and does that matter for aluminum or high temperature work?
The G973UNP is nickel plated. Nickel plating is the finish specified where tin would be marginal, typically higher operating temperature terminations and locations where corrosion resistance at the bolted joint matters. If you are terminating in a standard dry interior panel at normal temperature, a tin plated lug is the usual choice instead.
