1) Will the Schlage B660 latch into the strike that is already in my frame?
Depends on what is cut in the jamb. The B660's standard strike is the 10-094, square corner with no box, measuring 1-1/8 x 2-3/4 inches, and the bolt throws 1 inch. If your existing strike is a square-corner 1-1/8 x 2-3/4 opening with a pocket deep enough for a full 1 inch throw, it drops in. Round corner, ANSI, and thimble strike options are available if the frame is prepped differently. The faceplate is 1-1/8 x 2-1/4 inches with square corners and a 1 inch bolt housing diameter, so the edge bore has to be 1 inch.
2) Is the Schlage B660 really Grade 1, or does that depend on which cylinder I order?
It depends on the cylinder, and this catches people out on spec jobs. The B660 is ANSI/BHMA A156.5 Grade 1 certified with the conventional cylinder. Order it with an FSIC and it certifies Grade 2; order it SFIC and it certifies Grade 3. The B660 starts at 1-5/8 inch door thickness with a conventional or FSIC cylinder, and 1-3/4 inch with SFIC, so a 1-3/8 inch door needs a different bolt.
