1) Will a Schlage modular mortise cylinder fit a thick door, or is it only good for a standard 1-3/4 inch door?
Cylinder length on the Schlage modular cylinder is set by the rear housing, and six rear housing lengths are offered specifically to accommodate thicker doors. The same cylinder body therefore covers a standard 1-3/4 inch commercial door and the thicker openings you run into on exterior and retrofit work; you change the rear housing instead of buying a different cylinder. 2) Can one Schlage modular cylinder be used in a rim exit device and a key-in-lever lock, or do I need a separate cylinder for each?
One modular cylinder covers all three. Changing the tailpiece, cam or rear housing converts it between mortise, rim and key-in-lever or key-in-knob use, which is the reason the platform exists: a locksmith carries one cylinder on the truck instead of three. As supplied here it is set up as a mortise cylinder with a straight cam. If you would rather stock a purpose-built rim housing, the Corbin Russwin 3070 is a 6-pin rim cylinder housing with a 1-7/8 inch tailpiece, though it is a Corbin Russwin part, not a Schlage one.
3) Does the Schlage mortise cylinder come with the compression ring and spring, or are those ordered separately?
Compression ring and spring are part of the assembly, and two cut keys come with it. That is everything needed to put the cylinder into a mortise lock. What you add is only what the application changes: a different tailpiece or cam if you are converting it to rim or key-in-lever service, or a longer rear housing if the door is thicker than standard.
4) Do I have to specify left hand or right hand when ordering a Schlage mortise cylinder?
No handing to specify. The cylinder is non-handed, so the same part goes into a left hand or right hand mortise lock. Handing is decided by the lock body and the trim, not by the cylinder. The two things that do have to match your lock are the cam and the cylinder length.
5) What standard is this Schlage mortise cylinder certified to for a commercial hardware spec?
BHMA certified to ANSI A156.5 2001, and it is a commercial cylinder rather than a residential one. A156.5 is the auxiliary lock and cylinder standard, so it is normally the line an institutional or facility spec cites when it calls out mortise cylinders. That certification is the piece a school, hospital or government submittal usually wants documented.
6) Can this Schlage cylinder be keyed into my building's existing master key system?

Two finishes are offered here, 605 bright brass and 626 satin chrome, both on the C keyway. 626 satin chrome is the standard commercial finish and is what most mortise locks in an office building or apartment property are already wearing, so it is the safe match on a fleet of doors. Beyond those two, the modular cylinder's front housing is produced in all finishes to match the locks, so correcting a finish mismatch later means changing a housing, not replacing the cylinder.
8) The mortise lock I am fitting calls for a cloverleaf cam rather than a straight cam. What do I order in place of the Schlage 20-001?
Two Corbin Russwin parts carry that cam. CR1070-114-A01 is a 1070 Grade 1 Series 1-1/4 inch six pin mortise housing with an A01 cloverleaf cam. CR1080-112-A01 is a 1080 Grade 1 Series 1-1/2 inch LFIC mortise cylinder, six pin, with an A01 cloverleaf cam described as a Schlage L cam and built for Schlage L9000 mortise locks. 9) What is a comparable 6-pin mortise cylinder from another brand if I cannot get the Schlage?
