1) Does a Schlage D40S privacy knob need to be handed, or is it reversible?
No handing to specify. The D40S Plymouth privacy set is non-handed, so one part number goes on a left or right hand door either way. Nothing to reverse in the field and nothing to state on the order.
2) How does the Schlage D40S bathroom knob unlock in an emergency?
Push button inside locks it. From the corridor side it opens with a small screwdriver in the outside knob face, which is what you want on a bathroom or bedroom where somebody can collapse behind the door. The button releases when the inside knob is turned or the door is closed, and the inside knob is always free for immediate egress.
3) Will a Schlage D40S drop into the strike and latch prep already in my door?
The D40S ships with an ANSI strike, 1-1/4 x 4-7/8 inch, and a spring latch (unguarded). If your frame already has the standard ASA 4-7/8 inch strike cutout, the strike drops straight in. On a 2-3/4 inch backset bore the lock lines up with existing prep. Frames prepped for a smaller T-strike will need the strike pocket changed or a T-strike ordered instead.

5) What should I use on a door 2 inches thick if a privacy knob only covers up to 1-3/4 inch?

7) Is the Schlage D40S ANSI F76, and what does F76 mean for a bathroom door?

If you need the janitor or maintenance staff to get in with a key rather than a screwdriver, F76 is the wrong function and you want a keyed cylindrical instead.
8) Is a Schlage D40S heavy enough for apartment bathrooms and dorm rooms, or should I use a residential knob?
The D Series is a commercial, heavy duty, Grade 1 cylindrical lock, which is the tier you want for multi-family and institutional bathroom doors that get cycled hard. Residential-tier privacy knobs are built for a single-family door. 9) What other Grade 2 privacy knob locks work as a substitute for a Schlage D40S?
The closest like-for-like is the Dexter C2000 Series privacy cylindrical ball knob, Grade 2, non-keyed, for 1-3/8 to 1-3/4 inch doors.
