1) Can I connect PVC pipe directly to PEX with the SharkBite UIP13 coupling?
That is exactly what the UIP13 is for. One end (White Collar) takes IPS pipe, certified for Schedule 40 PVC, and the other end (Mustard Collar) takes CTS tubing: copper, PEX, CPVC, or PE-RT. No glue, solder, clamps, or unions. Push the PVC in one side and the PEX in the other and the joint is made.
2) Which side of the SharkBite UIP13 is which? I don't want to push the wrong pipe in.
Collar color tells you. White Collar is the IPS side for Schedule 40 PVC (it also fits IPS CPVC Schedule 40 and Schedule 80). Mustard Collar is the CTS side for copper, PEX, CPVC, or PE-RT, and those can be mixed in any combination across a job.
3) Is the UIP13 coupling rated for hot water lines behind a wall?
It carries a 200 PSI and 200 degrees F rating across both sizes, which covers domestic hot and cold potable lines, and the description calls it out for behind-the-wall installations. It also meets the 2014 U.S. Safe Drinking Water Act low-lead requirement for potable use.

5) What sizes does the SharkBite UIP13 transition coupling come in?
Two trade sizes, 1/2 inch and 3/4 inch, each as a CTS x IPS coupling. The 1/2 inch is MPN UIP4008 and the 3/4 inch is UIP4016. Both sides of a given fitting are the same trade size, so it is a straight transition and not a reducer.
6) Can I take the SharkBite UIP13 back apart if I get the fit wrong?
Yes. It disassembles with the SharkBite disconnect tool and the fitting can be reused, so a valve or fitting swap later does not mean cutting the joint out. The disconnect tool is a separate purchase, not included with the coupling.
7) Will the fitting still line up if my pipe run is slightly off? Can I rotate it after it's pushed on?
The coupling rotates after assembly, which is the point of it in a tight rough-in: push it on, then turn it to line the other leg up rather than fighting the pipe. Nothing has to be loosened to do it.
8) When should I use a push-to-connect transition coupling instead of a threaded union or solvent-welded adapter?

A solvent-welded or threaded transition is still the lower-profile permanent joint and needs no special tool to remove, but it means primer, cement, cure time, or a wrench on a union. The UIP13 trades that for an immediate, serviceable joint rated 200 PSI / 200F.
9) How does the SharkBite push-fit joint actually seal without glue or solder?
Inside the coupling, stainless steel teeth bite into the pipe wall to hold it, and an O-ring compresses against the outside of the pipe to seal it. No torch, no primer, no cement, no mechanical fasteners. Cut square, deburr, and push the pipe to full insertion depth.
