1) Will a Topaz snap-on strap work on IMC, or only rigid?
Both. The strap is sized for Rigid/IMC, and since IMC and RMC share the same trade size outside diameters, one strap covers either. Match the trade size marked on the pipe and it snaps on. It is not sized for EMT, which is a smaller OD at the same trade size, so an EMT run needs an EMT strap instead.
2) Can I add conduit straps to a run that's already installed without taking the pipe apart?
That's the point of the snap-on design. The strap presses over the conduit from the side instead of the pipe being threaded through it, so you can add or replace supports on a finished run, or on a retrofit where the ends are already terminated into boxes. Set the fastener in the single center hole first if you like, then snap the pipe in.
3) One-hole or two-hole conduit strap, which should I use for rigid conduit?
