1) Will Trimco 243/244 cane bolts work on a pair of doors with no center mullion?

The 243/244 cane bolts are top and bottom surface bolts for pairs of doors, so the inactive leaf gets bolted into the head above and the floor or threshold below, and the active leaf latches against it. The 243T is the 15 inch top bolt and the 244B is the 30 inch bottom bolt. Order both if you want the inactive leaf secured at head and sill; a single bolt only holds one end.
2) What lengths do the Trimco 243T and 244B cane bolts come in?
Two stock lengths: the 243T top bolt is 15 inches and the 244B bottom bolt is 30 inches. The 30 inch bottom bolt is the one that reaches down to floor strike height from a normal push-bar or mid-door mounting position, and the 15 inch top bolt throws up into the frame head.
