1) Can the WAC Colorscaping 5811-CS run off my existing 12V landscape transformer?
No. The 5811-CS needs WAC's patented Colorscaping power supply (150W or 300W) to work. Control signal rides the existing 12-2 landscape wire using Power Line Communication, so you don't pull any secondary control cable, but a standard magnetic transformer won't give you color tuning or the smooth dimming to 10 percent. The fixture itself accepts 9-15V AC and draws 15W (16VA), so the existing wire runs and stakes usually stay put and you swap the transformer.
2) Can one fixture do both tree uplighting and a tighter accent beam, or do I need different optics?
One fixture covers both. The beam adjusts continuously from 20 to 60 degrees with a twist of the dial, with detents at 20, 30, 45 and 60 degrees. That means you can stock a single SKU for a job and set flood on hedgerows and wall washes, then dial down to spot for a trunk or a column on site instead of ordering separate lenses.
