2) Can I use the Viega 94031 press stop valve on copper pipe instead of PEX?
No. The press inlet on the 94031 is a Viega PureFlow press end, which is for PEX tubing, not copper. If the stub-out in the wall is copper, you need a copper press or solder angle/straight stop instead. Check what is coming out of the wall before you order.
