1) How thick a fixture can I fasten with a 1 inch long hammer drive anchor?
Keep it thin. With a total length of 1 inch, most of that has to sit in the masonry for the anchor to hold, so the J141T suits sheet metal straps, conduit clips, box ears, and similar light material rather than thick wood or stacked shims. If you are anchoring through anything substantial, step up to a longer anchor so the embedment stays adequate.
2) Can I use the J141T anchor in drywall or hollow block cells?
No. This is a solid-base masonry anchor: it needs concrete, solid brick, or the solid web of a block to expand against. Driven into drywall or into the hollow cell of a CMU it will spin or pull straight out. For drywall use a toggle or self-drilling wall anchor; for hollow block use a toggle bolt sized to the cell.
