The JG8HC6 is a 1/4-20 bolt, 3 inches long, so it is 20 threads per inch with a measured shank diameter of 0.2450 to 0.2500 inch. That is standard 1/4-20 UNC, so any 1/4-20 nut or tapped 1/4-20 hole will take it. For full Grade 8 joint strength you want a matching Grade 8 (or higher) nut, not a standard Grade 2 nut.
2) Is Grade 8 overkill, or do I actually need it instead of Grade 5?
Grade 8 buys you tensile strength. The JG8HC6 is rated at 150,000 psi minimum tensile and 130,000 psi minimum yield, with a hardness of Rockwell C33-39 from medium carbon steel that has been heat treated. Grade 5 of the same diameter cannot reach those numbers. If you are hanging a bracket, strut, or a light fixture where the load is nowhere near the limit, Grade 5 or even Grade 2 will do the job. Choose Grade 8 where the joint is highly loaded or vibration means you need to torque it hard without yielding the fastener.
