1) Will the Oatey Dearborn 14T basket strainer work in a deep cast iron kitchen sink?
That's exactly what the 14T is built for. It uses a shallow locking cup, which is the shorter body style you need when the sink is a deep cast iron bowl and there isn't room under the deck for a standard-depth cup. Body length is 2-3/4 inches, and it ships with a 4 inch chrome plated stainless steel tailpiece to reach the trap arm.
2) Does the Oatey 14T strainer come with a tailpiece and stopper, or do I need to buy those separately?
Everything for the drain side is in the box: the stainless steel body and basket, the shallow locking cup, the neoprene rubber stopper, and a 4 inch chrome plated stainless steel tailpiece. What you supply on the job is plumber's putty or a sealant for the flange bed and whatever trap and continuous waste the sink needs below the tailpiece.
3) Shallow cup versus a standard deep cup basket strainer, which one do I need?
Measure the space under the sink deck. A shallow cup like the 14T keeps the assembly short, 2-3/4 inches, which is what a thick cast iron sink deck calls for because the sink itself eats up the vertical room. On a thin stainless sink bowl a standard deeper cup is usually fine. If you put a deep cup in a heavy cast iron sink you can run out of thread on the locknut side before the flange pulls down tight.
4) How does the 14T basket lock in place, and does the basket hold water?
It's a snap-in basket with a locking cup, so the basket seats and holds rather than just resting loose in the opening. The stainless basket carries a stainless stick post, and a neoprene rubber stopper does the sealing when you want to fill the bowl.
5) Is the Oatey 14T strainer stainless or just plated pot metal? I need something that survives commercial kitchen use.
Body and basket are both stainless steel, with a chrome finish on the body and a bright flange face. The tailpiece is chrome plated stainless as well. For multi-family turnovers or a facility standardizing on one strainer, that's a longer-lived combination than the zinc-bodied strainers common at the low end.
6) How does the Oatey 14T mount to the sink, and can one person install it?
It's a threaded install: bed the flange, drop the body through the sink opening, then pull it down from below with the friction ring, washer and locknut. One person can do it with a basket wrench or spud wrench while holding the basket to keep the body from spinning. The whole assembly weighs about 0.75 lb, so nothing needs support while you tighten.
