1) Is the RACO 257 square box deep enough for a multi-gang device or a pull point with several conduits landing in it?
At 2-1/8 in. deep with a 4-11/16 in. square footprint, the RACO 257 is the deep version of the 4-11/16 box, which is what electricians reach for when several conduits land in one box or when conductors have to be pulled through. Between the one 1/2 in. knockout and the fifteen 1/2 - 3/4 in. combination TKOs, you can bring in multiple runs and still have room to work the wires.
2) Will the RACO 257 take 3/4 in. EMT, or only 1/2 in.?
Both. Fifteen of the openings are 1/2 - 3/4 in. combination TKOs, so you punch them to whichever trade size the run calls for. There is also one plain 1/2 in. knockout. Combination TKOs are opened in the field, so you only remove what you actually use.
3) Can I use this RACO box with NM cable (Romex), or is it conduit only?

The box has knockouts and threadless combination TKOs rather than cable clamps, so NM cable would need separately provided connectors and a box listed for that method. For raceway work, EMT or rigid with the appropriate conduit fittings, this is the right box.

The 257 is a no-bracket box, so it fastens through its own back or side holes to the surface or structural member, or it is supported by the conduit itself. If you are nailing or screwing to a stud face at a set setback for drywall, you want a bracketed version of the 4-11/16 box instead.
