1) Is a passage knob the right choice for a corridor or closet door, or do I need a privacy or entry set?
Passage function, ANSI F75, means both knobs are always unlocked and there is no cylinder and no pushbutton at all. It is a latch, not a lock. 6) Is the Schlage D10S the same as the Schlage F Series knob from the home center?
Different lines. The D10S is a commercial, Grade 1, heavy duty cylindrical knob with a 2-3/4 inch standard backset.
