1) I have a wood framed sliding door with a recessed jamb - is the Adams Rite 5017 the right deadlock for it?
That recessed jamb is exactly why the 5017 exists. Wood sliding door systems set the jamb back, and a shallow backset lock cannot reach far enough to throw its bolt into it. The 5017 runs a deeper 1-1/4 inch backset to clear it. Measure from the face of the door edge to the centerline of the cylinder hole on your prep; if it lands at 1-1/4 inches, this is the lock. If your sliding door is metal framed instead of wood, the MS1847 is the counterpart for metal applications.
2) Will the Adams Rite 5017 deadlock fit a 1-3/8 inch door?
