1) Do I have to order a separate normally open and normally closed version of the E51 limit switch style sensor?
No. The sensor head on the E51CNS1S has a programmable output selector switch, so you set NO or NC operation in the field on the same part. That means one item on the shelf covers both logic requirements across a plant.
2) Will this inductive proximity sensor hold up in a washdown area?
It carries NEMA 4, 4X and 13 environmental ratings, which covers hosedown, corrosion resistant and oil-laden environments. The receptacle and housing are die cast zinc with a plastic sensing head, and the cable is SOOW-A, a rubber jacketed type suited to wet and oily machine areas.

5) Shielded or unshielded, and can I mount this sensor flush in a steel bracket?
The E51CNS1S is a shielded inductive proximity sensor, so it can be mounted flush in surrounding metal without the metal triggering it. Unshielded sensors give longer sensing range but need a clear zone around the face.
6) Why replace a mechanical limit switch with an E51 limit switch style sensor?
It is built in the limit switch form factor so it fits the same style of mounting and conduit position as a mechanical switch, but there is no plunger or roller lever to wear out. Sensing is inductive and contactless, output is solid state at 1.0A rather than mechanical contacts, and the die cast zinc receptacle and housing take machine-side abuse. Note it senses metal targets only, so anything that relied on a lever being pushed by a non-metallic part needs a different technology.
7) Does the E51CNS1S have built-in short circuit protection on the output?
No. Protection is listed as none on this model, so the 1.0A solid state output should be fused or otherwise protected in the control circuit. Keep the load at or under 1.0A max AC current.
