1) Does the Don-Jo 9080 CW work with a 2-3/8 inch backset lock?
No. The cylinder and spindle cutouts on the 9080 CW are laid out for a 2-3/4 inch backset, which is the standard mortise lock backset. If the lock on your door is a 2-3/8 inch backset, the holes won't line up with the trim and cylinder and the plate won't mount. Measure from the door edge to the center of the knob or lever spindle before ordering.
2) Do I have to specify handing when I order a Don-Jo 9080 CW wrap plate?
Yes, handing is an ordering decision on this one. The 9080 CW comes in Left Hand, Left Hand Reverse, Right Hand and Right Hand Reverse. Stand outside the door (the key side): if the hinges are on your left it's a left hand door, hinges on the right is right hand. If the door swings toward you rather than away, it's the reverse version, LHR or RHR. The cutouts are punched to that hand, so a right hand plate will not serve a left hand opening.

4) How much of the door does a 5-1/8 x 12 inch wrap around plate cover?

Four finishes across every hand: 10B oil rubbed bronze, BZ satin bronze, PB polished brass, and S satin stainless. For a building already standardized on 630 satin stainless levers, the S satin stainless wrap is the match. Dark bronze openings take the 10B. Where the existing trim is brass, PB polished brass is the one that blends. Each finish is available in all four handings.
7) Can I use a wrap around plate instead of replacing a damaged commercial door?
For damage confined to the lock area, yes, and that is the usual reason a property manager buys one. The 9080 CW goes over the existing Schlage mortise lock prep on a 1-3/4 inch door, covering torn-out screw holes and surface damage while the original lock stays in service. What it will not do is fix a door that's warped, delaminated, or damaged away from the lock stile. It's a repair for the lock area, not for the door as a whole.
