1) Does the 3324 G NK wireway come with knockouts for conduit?
No knockouts. The NK in the 3324 G NK designation means the trough ships blank, so any conduit entry has to be punched or hole-sawed in the field where you want it. That's the reason a lot of contractors prefer it: you place the entries to suit the run instead of working around factory knockouts. If you'd rather not punch steel on site, order a knockout version of the same size instead.
2) Is this a NEMA 1 or a raintight wireway?

It is not gasketed and is not rated for outdoors, washdown, or damp areas. For an exterior or wet run you need a NEMA 3R raintight trough, not this one.
3) How does the cover come off for pulling wire?
The cover is a screw cover, held on with plated screws along the flange. You back the screws out to lay the whole side open for pulling and splicing, then reinstall them. Plan for a screwdriver or nut driver at every access point; if you're opening the run repeatedly for maintenance, a hinged-cover trough is the friendlier choice.
4) How does this wireway mount to a wall or backpan?
Through holes in the body. You fasten straight through the trough into the wall, strut, or backpan with your own hardware - anchors, bolts, or strut nuts are not included, so pick fasteners for the surface you're landing on. The through-hole pattern also means the mounting fasteners sit inside the wiring space, so dress conductors clear of the screw heads.
5) What gauge steel is the 3324 G NK trough, and will it hold up in a plant?
16 gauge steel, finished in ANSI 61 gray. That's the standard commercial weight for small wireway - stiff enough to span between supports without oil-canning and to take field-punched conduit entries without deforming. ANSI 61 gray is the same gray used on most panelboards and control enclosures, so a run of it matches adjacent gear.
