1) Will the Keystone KT-LED27PSHID-EX39-8CSB-D work on my existing metal halide ballast, or do I have to bypass it?
This is a line voltage lamp, not a ballast-compatible retrofit. It runs on 120-277V input, so the existing HID ballast has to be removed or bypassed and the socket wired direct to line. Once that's done it drops into the same EX39 mogul socket and replaces a 100W metal halide lamp.
2) How much light do I actually get at each wattage setting on this Keystone Power Select lamp?
Output runs 3500/3900/3800 lumens across the 27/22/18W settings. Note the middle setting is the brightest of the three, so 22W is the efficiency sweet spot. CRI is greater than 80 at all settings.
3) Can one lamp cover multiple buildings with different color temperatures, so I stop stocking three SKUs?

4) Does this lamp work on a dimmer?

Beam distribution is 360 degrees, omnidirectional like the HID lamp it replaces. In an open fixture with a reflector that's fine, but in a fixture where you want the light thrown one way, a directional or horizontal-optic HID replacement lamp is the better choice. Vertical open-bottom fixtures, garage canopies and high bays are where the 360 degree pattern earns its keep.
6) How long before I'm back up on the lift to change these out?

On a parking garage or warehouse running roughly 12 hours a day that's over eleven years of service, against the one to three year relamp cycle a 100W metal halide typically forces.
