1) What is a Nibco 809 11-1/4 degree elbow used for on a DWV line?
It's the shallowest of the standard bends, a 1/32 bend, used to nudge a copper drain, waste, or vent line slightly off its run without breaking the pipe's slope the way a 45 or 90 would. Typical use is offsetting around a joist, a stack, or a beam where you only need a few degrees of correction. It's a straight size fitting, so both ends match the same pipe size and no reducer is built in.
2) Does the Nibco 809 elbow solder on, or is it threaded?
Solder only. Both ends are C x C, meaning copper cup on each side, so the fitting slips over the outside of the tube and gets sweated with solder or brazed. There's no thread on either end, so if you need to transition to a threaded drain component you'll need a separate adapter fitting ahead of it.
3) Will a DWV solder elbow work on a copper water supply line?
No. The 809 is a DWV fitting, built for drain, waste, and vent service, and DWV fittings are not rated for pressurized supply piping. Both. The 809 is listed for commercial and residential plumbing use on DWV systems, so it's the same fitting whether you're running vent piping in a multi-family building or a house remodel. Note it's a DWV fitting, not a pressure fitting, so keep it on drain, waste, and vent runs.
6) Do I need a 11-1/4 degree elbow or a 45 for a small offset around an obstruction?
Depends how far you need to move and how much fall you can spend. An 11-1/4 degree bend, the 1/32 bend, changes direction the least of the common DWV elbows, so a pair of them makes a long shallow offset that keeps most of the pipe's grade. A 45 (1/8 bend) moves the line over in a much shorter distance but eats more fall and adds more turbulence. For clearing a joist or squaring up a run into a stack by an inch or two, the 11-1/4 is the fitting; for a full jog around a beam, go to 45s.
