1) Will the Pemko EZgap XG10 intumescent gasket seal a fire door gap that's too wide to pass inspection?
The XG10 handles gaps up to 1/4 inch. That is the reason it exists: it's a single-piece surface-applied intumescent for openings where the clearance has grown past what a standard smoke seal covers. The graphite and elastomeric core expands under fire temperature to close the gap. If your measured gap exceeds 1/4 inch, this is not the fix.
2) Is the XG10 fire gasket rated for wood doors as well as hollow metal?
Both, but the ratings differ. UL 10C tested for 90 minutes on hollow metal doors and 60 minutes on wood doors. If the opening you're remediating is a 90-minute wood door, that 60-minute figure is the one that governs.
3) How much frame face does the Pemko XG10 gasket cover, and will it clear my stop?
The XG10 measures 1-9/16 inches wide by 1/16 inch high. That 1/16 inch profile is the number that matters on a tight opening: it adds almost nothing to the door-to-frame relationship, so it can go on without rehanging or re-prepping the door. The 1-9/16 inch width needs a flat run of frame face or door edge that wide to bond fully.

6) Can I cut the 18 foot roll of EZgap to length on site?
Yes. It ships as an 18 foot roll and is cut in the field with heavy scissors, so one roll covers a mixed set of openings rather than forcing you to order per-door lengths. Eighteen feet is roughly a full perimeter on two standard single doors plus offcuts.

Different jobs; on a rated opening with a wide gap it's the intumescent you need.

The intumescent core sits in a semi-rigid PVC casing that resists water and humidity while staying flexible enough to seal. That casing is why it can go in a service corridor or a stair door without the core degrading.
