1) Will the RCI 7319 electric strike work with my cylindrical lockset, or is it only for mortise locks?
Both. The 7319 is built for cylindrical locks and for centerline mortise latch and exit locks, as long as the latch projects 5/8 inch (16mm). That projection is the deciding spec, not the lock body style. If your latch throws more or less than 5/8 inch into the frame, this is the wrong strike.
2) What door thickness does the RCI 7319 strike cover?
