4) I'm replacing a Falcon key-in-lever cylinder - can I use the Schlage 21-059 instead?
No, not as a drop-in. The 21-059 is made for Schlage S and S200 Series levers. If the lever body is Falcon, order the Falcon key-in-lever cylinder for that chassis, the A23161-05 G for RU and T Series in the 6-pin G keyway with two cut keys. For a Sargent lever, the Kaba Ilco 1579 knob and lever cylinder is the one made for that. Match the cylinder to the lock chassis first, then worry about the keyway.
5) What is the difference between the Schlage 21-059 key-in-lever cylinder and the Falcon A23161-05 G key in lever cylinder?

No. The 21-059 goes into Schlage S and S200 levers.
