1) Will the Schlage MTKB15 reader read our existing 125 kHz prox cards while we move people over to smart credentials?
Yes. The MTKB15 reads 125 kHz proximity and 13.56 MHz smart credentials in the same unit, including MIFARE Classic and MIFARE DESFire EV1, EV2 and EV3, plus the card serial number of other manufacturers' smart cards. That is the point of the multi-technology design: you keep the old prox population working on the same reader while you issue smart cards or mobile credentials at whatever pace the budget allows, instead of swapping readers twice.
2) Can the MTKB15 wall reader be wired into a third-party access control panel, or does it require a Schlage system?

Where the location has no box and cutting one in is not on the table, the Securitron R100 is a surface mounted wireless card reader in the RH100 series and fixes to the face of the wall. Note the trade in capability: the R100 reads cards, while the MTKB15 adds a keypad for PIN entry and reads 125 kHz proximity and 13.56 MHz smart credentials along with Bluetooth and NFC mobile credentials.
7) Do I need the keypad version, or is a card-only reader enough?
Take the keypad if you want two-factor at the opening. The MTKB15 pairs keypad entry with the credential read so you can require card plus PIN, which is what most facilities specify for server rooms, pharmacy, cash handling and after-hours perimeter doors. If the door only ever needs a badge tap, the keypad is added cost and one more thing to clean.
