1) Will the Schlage PM050 mortise lock fit a 2-inch thick door?
The PM050 is built around a 1-3/4 inch door as standard, with 1-3/8 inch the minimum, and it will go into doors up to 2-1/2 inches thick. Don't assume a thick door order ships the same as a standard one.

3) How does the entrance/office function on the Schlage PM050 actually work day to day?
Key cylinder outside, thumbturn inside. The outside lever is locked either by the key outside or by turning the inside thumbturn, and it is unlocked the same two ways. Key from outside both unlocks the outside lever and retracts the latchbolt. Turning the inside lever always retracts the latch for immediate egress, but it does not change the locked state. That is the classic office door behavior: staff can lock the door from inside without a key and leave it that way.
