2) Is the CTC-3312 wide enough for washing dishes, or is it really just a bar sink?

The bowl measures 26 inches long but only 6-1/2 inches wide and 6 inches deep, so it takes glasses, bottles, produce and bar prep lengthwise, not stacked plates or a large pot. If a crew needs to wash cookware, go with a standard deep single bowl instead and keep this one as a secondary prep or bar station.
3) What drain and strainer does this Houzer trough sink take?
The opening is a 3-1/2 inch drain, centered in the bowl, which is the standard kitchen waste size, so it mates with a typical 3-1/2 inch basket strainer and tailpiece. A basket strainer (190-9180) and a bottom grid (BG-1308) ship with the sink, so you are buying the trap and tailpiece, not the strainer.
