The bowl is 10 inches deep with an interior of 21 x 16 inches, inside a 23 x 18 inch overall sink body. That is a full-size single bowl that takes a sheet pan or a stock pot flat, and the straight deep drawn walls mean you keep most of that 21 x 16 footprint at the bottom rather than losing it to a heavy radius.
2) Can the CTS-2300 be installed in a laminate or solid surface countertop, or does it need stone?
It is an undermount sink, so it mounts to the underside of the deck and needs a countertop material that can carry the sink and take a finished, sealed cut edge. Granite, quartz, and solid surface all do that. Standard laminate does not, since the exposed particleboard core at the cutout is not sealable for an undermount. Mounting hardware and a template come with the sink.

The sink ships with the basket strainer (190-9180), the bottom grid (BG-4210), mounting hardware, a cutout template, and instructions.
