6) Should I use a press PEX adapter or a soldered copper adapter for a PEX to copper transition?
Press is the choice when you can't or don't want to bring flame to the joint: occupied buildings, finished ceilings, hot work permit restrictions, or a wet line you can't dry out. The PC604-P presses onto the copper side with a tool and jaw instead of a torch, and the "N" witness mark gives a visual check the joint was pressed. A soldered adapter is still the cheaper fitting if you're already brazing the run and have open access. Note that with press you're committing to owning or renting the NIBCO press tool, jaws and chains for the sizes you're running.
7) Do I need a special tool to install the Nibco PC604-P PEX adapter, or is the PEX side crimped separately?
Both ends are made up with tooling, not solder. The press end takes a NIBCO press tool with the jaw or chain sized to that fitting, and the PEX end is joined per the NIBCO Press System installation instructions. Get the jaw size right for each size you're running: 1/2, 3/4 and 1 inch each need their own.
