1) Do I have to specify handing when I order a Schlage ALX53 lever?
No. The ALX53 is non-handed, so one lock covers a left or right hand door and the inside lever is always free for egress. That removes the most common ordering mistake on a lever lock and means truck stock does not have to be split by hand.
