1) Will the Arrow MK12 fit a 1-3/8 inch door, and what door prep does it need?
Fits 1-3/8 inch through 1-3/4 inch doors as standard, which covers both the older interior thickness and the standard commercial leaf. Prep is the usual cylindrical pattern: a 2-1/8 inch bore through the face of the door and a 7/8 inch bore in the door edge for the latch. If the door already carries a bored knob or lever lock, the holes are almost certainly there.
2) Will the Arrow MK12 latch into the strike that is already in my frame?

Four cylinder choices. Grade 2 is built for commercial openings where heavy duty Grade 1 hardware is not necessary, which is most tenant storage, offices and back of house doors. On a stairwell, a main entry, or anything that gets hammered all day, go Grade 1.
