On the hot side you can, within limits. CPVC here is rated to a maximum service temperature of 180 degrees F, which covers domestic hot water distribution. What matters at a heater is standoff: keep the plastic adapter off the tank nipple itself and away from the flue and draft hood, and follow the local code distance for the first rigid metal or flex connector off the heater.
