1) Will the Nibco 4892 P-trap connect to 1-1/2 inch PVC drain pipe, and is there a version for a 1-1/4 inch tailpiece?
Two sizes are built: a straight 1-1/2 inch trap (MPN K600350) and a 1-1/2 x 1-1/4 inch (MPN K600500) for where the fixture tailpiece is the smaller 1-1/4 inch. Both are Hub x SJ, so the hub side solvent cements onto Schedule 40 PVC DWV pipe and the slip joint side takes a nut and washer at the tailpiece.
2) What does the union joint on the Nibco 4892 PVC trap actually do for me on a service call?
The union nut lets you break the trap apart at the bend without cutting pipe or disturbing the cemented hub connection. That is the difference between this and a one-piece solvent-weld trap: you can pull the U to clear a stoppage or retrieve something dropped down the drain, then reassemble. It is a P-trap with union joint, so the fixture side stays a slip joint and the drain side stays permanent.
3) Can I use the Nibco 4892 PVC P-trap on a commercial job, or is it residential only?

4) Is a PVC P-trap OK under a commercial kitchen or lab sink that sees hot water?
Maximum service temperature on this PVC trap is 140 degrees F. Ordinary hot water at a lavatory or a residential kitchen sink is fine. A dishwashing station, a sterilizer, or any drain that dumps water hotter than 140 F is past the material's rating, and so is a lab waste line running aggressive solvents. Also never pressure test it with compressed air or any gas, it is a drainage fitting only.
5) What is the difference between a hub x slip joint trap and a slip x slip trap, and which do I want?
Hub x SJ means one end is a solvent cement socket and the other is a slip joint. Use it where the trap arm ties permanently into a cemented PVC DWV branch and the only serviceable connection is up at the fixture tailpiece. If you are working on an existing stub-out with a trap adapter already in the wall, or you need the whole assembly to come apart by hand, you want a slip joint on both ends instead. Once the hub end on the 4892 is cemented, that joint is permanent.
6) Do I need anything besides the Nibco 4892 trap to finish the connection?
You will need PVC solvent cement and primer for the hub end, and a slip joint nut and washer at the fixture end if the tailpiece does not already have them. The trap itself is the body plus the union nut. On the 1-1/2 x 1-1/4 combination (K600500) confirm the tailpiece is the 1-1/4 inch size before you set the washer.
7) Will a PVC trap corrode or scale like the chrome tubular trap I am replacing?
No. PVC will not rust, scale, pit or corrode, and it resists chemicals, which is why it outlasts thin-wall chromed brass under a hard-water or high-use fixture. The trade-off is the 140 degree F ceiling and that it is white, not chrome, so it is not the choice for an exposed pedestal sink where the trap is visible.
8) Why does a P-trap need to hold water, and does the union version still seal properly?
The arc of the trap holds a water seal that blocks sewer gas from coming back up through the fixture drain. The union joint on the 4892 does not change that, it just gives you a mechanical break point in the bend. Assemble the union nut fully so the seal holds; a partly tightened union is the usual reason a serviced trap starts venting odor.
