1) How does the Nibco 703-LF adapter connect on each end?

Yes, the NPT side is a tapered thread joint and needs PTFE tape or a pipe thread compound rated for the system fluid. The solder cup side takes flux and solder instead. Solder the copper side first and let it cool before you make up the thread, so you're not heating the sealant.
